Of all the so-called preserves I made last season, crab apple jelly was certainly one my favourites. I appreciate the gorgeous jewel hue of the jelly, also, the tartness from this will only be perfect on my own tongue. There is also a crab apple tree individuals front yard within each of the 20 years Ive lived there, it never struck me to reap those apples and cook them up. In '09, my daughter i were shopping from the farmers' market by our cottage but they had baskets of beautiful crab apples. We tried each other and said, why didn't we predict with the?As of late I spend many my summer away from home so I'm not saying there for your harvest time, but I hope to build my son and daughter to get and next bring them up in my opinion in order to conduct jelly again this current year. Contrary to running a jelly bag, she had a past white cotton pillowcase that he used year after year, dyed having the colours of all the so-called fruits she'd used over time. Take care not to peel or core. In large Saucepan, bring crab apples and 6 cups water to boil. Reduce heat, cover and simmer, stirring occasionally, about Fifteen minutes or until softened. Using potato masher, crush crab apples; cook 5 minutes longer.
Wet and wring out jelly bag; suspend on frame over large measuring cup or bowl. Fill with crab apples; let drip, without squeezing bag, approximately 2 hours or until juice measures 61/2 cups, accumulating to 11/2 cups water if needed.
In large clean Dutch oven, bring juice with sugar to full rolling boil over mediumhigh heat, stirring constantly; boil for 15 to 18 minutes or until gel stage. (See Gel Stage Test, below) Remove from heat; skim off foam.
Preserving the Harvest
